Description

Crispy Cheesecake Cookie Croffles combine everything you love about waffles, cookies, and cheesecake in one irresistible treat. These croissant-based croffles are stuffed with sweet cheesecake filling and cookie crumbles, then pressed in a waffle maker for the perfect crispy, gooey bite.

Ingredients

Scale
  • 1 can (8 oz) refrigerated crescent roll dough or puff pastry sheet
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup crushed chocolate chip cookies or cookie crumbs
  • Butter or non-stick spray (for waffle iron)
  • Optional toppings: powdered sugar, chocolate drizzle, whipped cream

Instructions

  1. Preheat your waffle maker and lightly grease with butter or non-stick spray.
  2. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Roll out the crescent dough and separate into rectangles or squares, pressing seams together if needed.
  4. Spread a spoonful of the cheesecake mixture onto the center of each dough square and sprinkle with cookie crumbs.
  5. Fold over the dough to seal and enclose the filling like a pocket. Pinch edges to seal well.
  6. Place one filled croffle at a time into the waffle iron and cook for 3–5 minutes or until golden brown and crisp.
  7. Remove and let cool slightly before adding desired toppings.
  8. Repeat with remaining dough and filling. Serve warm.

Notes

  • Use different cookie types like Oreos, graham crackers, or Biscoff for flavor variations.
  • Make sure the dough is well sealed to prevent filling leaks.
  • These are best served fresh but can be reheated in a toaster for extra crispness.
  • Try adding mini chocolate chips or berries to the filling for extra flair.
