- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 can (15 oz) white beans, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 1/2 cup chicken broth
- 1 tsp thyme leaves
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and cook until skin is crispy and golden, about 5-7 minutes. Flip and cook 2 more minutes. Remove chicken and set aside.
- In the same skillet, add onion and garlic, sauté until softened.
- Stir in vinegar, scraping up any browned bits. Add chicken broth, beans, and thyme. Stir to combine and season with salt and pepper.
- Return chicken thighs to the skillet, skin-side up. Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through.
- Garnish with fresh parsley and serve hot.
