These Crispy Shrimp Burrito Bites are the perfect appetizer or snack! Crunchy on the outside and filled with succulent shrimp, seasoned rice, beans, cheese, and zesty spices, they’re a delicious bite-sized twist on classic burritos.

- 1 lb (450g) medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 cup cooked rice
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 8 small flour tortillas
- Vegetable oil, for frying
- Sour cream, guacamole, or salsa for dipping
Instructions
- In a bowl, toss shrimp with olive oil, chili powder, paprika, cumin, and salt. Cook in a skillet over medium heat for 2-3 minutes per side until pink and cooked through. Remove and chop into bite-sized pieces.
- In a separate bowl, mix cooked rice, black beans, cheese, and cooked shrimp until combined.
- Cut tortillas in half. Place a spoonful of the shrimp mixture on one end, fold in sides, and roll up tightly to form small burrito bites. Secure with a toothpick if needed.
- Heat 1 inch of vegetable oil in a skillet to 350°F (175°C). Fry burrito bites in batches for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- Serve warm with sour cream, guacamole, or salsa for dipping.
Notes
- Air-fry at 375°F (190°C) for 8-10 minutes as a lighter option.
- Replace shrimp with chicken or veggies for variation.
- Make ahead and freeze un-fried burrito bites for a quick snack later.
