Description

Crispy Vegetable Pakoras are a popular Indian snack made from assorted vegetables coated in a spiced chickpea flour batter and deep-fried until golden and crunchy. Perfect for tea time or as an appetizer.


Ingredients

  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon baking powder
  • Salt to taste
  • 1/2 cup water (adjust as needed)
  • 1 cup thinly sliced onions
  • 1 cup thinly sliced potatoes
  • 1 cup chopped spinach
  • 1/2 cup chopped cauliflower florets
  • Vegetable oil for deep frying

Instructions

  1. In a large bowl, combine chickpea flour, turmeric, cumin seeds, garam masala, red chili powder, baking powder, and salt.
  2. Gradually add water while whisking to form a thick, smooth batter.
  3. Add the sliced onions, potatoes, spinach, and cauliflower to the batter. Mix well to coat all vegetables evenly.
  4. Heat oil in a deep frying pan over medium heat.
  5. Drop spoonfuls of the batter-coated vegetables into the hot oil, frying in batches to avoid overcrowding.
  6. Fry pakoras for 3-4 minutes or until golden brown and crispy, turning occasionally.
  7. Remove with a slotted spoon and drain on paper towels.
  8. Serve hot with mint chutney or tamarind sauce.
