- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can chili beans (or pinto beans), undrained
- 1 (15 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (8 oz) can tomato sauce
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 3 cups corn chips (Fritos), for serving
- 1 1/2 cups shredded cheddar cheese
- Sour cream, chopped green onions, and jalapeños for garnish (optional)
Instructions
- In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
- Stir in garlic and cook for 1 minute.
- Transfer beef mixture to the slow cooker. Add chili beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- To serve, place a handful of Fritos in each bowl, ladle chili mixture over the chips, and sprinkle with shredded cheese.
- Top with sour cream, green onions, or jalapeños if desired.
