Description

Crock Pot Frito Pie is a comforting, Tex-Mex-inspired dish featuring seasoned ground beef, beans, and tomatoes slow-cooked to perfection, then served over a bed of crunchy Fritos and topped with melty cheese. It’s a hearty, crowd-pleasing meal that’s easy to make and full of flavor.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can chili beans (or pinto beans), undrained
  • 1 (15 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (8 oz) can tomato sauce
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 3 cups corn chips (Fritos), for serving
  • 1 1/2 cups shredded cheddar cheese
  • Sour cream, chopped green onions, and jalapeños for garnish (optional)

Instructions

  1. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
  2. Stir in garlic and cook for 1 minute.
  3. Transfer beef mixture to the slow cooker. Add chili beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. To serve, place a handful of Fritos in each bowl, ladle chili mixture over the chips, and sprinkle with shredded cheese.
  6. Top with sour cream, green onions, or jalapeños if desired.

Notes

  • Use ground turkey or plant-based crumbles as a lighter or vegetarian alternative.
  • Add extra heat with chipotle powder or diced jalapeños.
