Description
A comforting, cheesy beef and potato casserole slow-cooked to perfection in the crockpot — loaded with savory ground beef, tender potatoes, melted cheese, and crispy bacon.

- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 1 1/2 cups shredded cheddar cheese, divided
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup cooked bacon bits
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- In a skillet over medium heat, cook the ground beef with onion and garlic until browned. Drain excess fat.
- In a large bowl, mix the cream of mushroom soup, sour cream, paprika, salt, and pepper. Stir in half of the shredded cheese.
- Grease the inside of the crockpot and layer half of the diced potatoes at the bottom. Top with half of the beef mixture and then half of the soup mixture. Repeat layers once more.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender.
- Sprinkle the remaining cheese and bacon bits on top. Cover and cook for an additional 10–15 minutes until cheese is melted.
- Garnish with chopped parsley before serving, if desired.
Notes
- Use frozen diced potatoes to save prep time — no need to thaw.
- Swap in cream of chicken soup or add diced bell peppers for variation.
- Leftovers can be stored in the fridge for up to 3 days and reheat well.
