Description

Crockpot Loaded Steak and Potato Bake is a hearty and comforting dish where tender steak, potatoes, cheese, and seasonings come together in a slow cooker to create a flavorful and satisfying meal with minimal effort.

Ingredients

Scale
  • 1 1/2 pounds steak (sirloin or ribeye), cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Chopped green onions, for garnish (optional)
  • Optional: crumbled bacon for topping

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the steak cubes and brown on all sides, about 5 minutes. Transfer the browned steak to the crockpot.
  2. In the same skillet, add the chopped onion and garlic and sauté for 2-3 minutes, until softened. Add the sautéed onion and garlic to the crockpot.
  3. To the crockpot, add the diced potatoes, beef broth, thyme, paprika, salt, and pepper. Stir to combine.
  4. Cover the crockpot and cook on low for 6-7 hours, or until the potatoes are tender and the steak is cooked through.
  5. Once the potatoes are soft, stir in the sour cream and shredded cheddar cheese. Mix until the cheese is melted and the dish is creamy.
  6. Garnish with chopped green onions and crumbled bacon, if desired, before serving.
  7. Serve and enjoy!

Notes

  • This dish pairs well with a side salad or steamed vegetables for a balanced meal.
  • If you prefer more cheese, you can sprinkle additional cheese on top and cook for a few minutes until melted before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
