- 4 boneless, skinless chicken breasts
- 1 (20 oz) can pineapple chunks in juice, drained (reserve juice)
- 1 cup BBQ sauce (your favorite brand)
- 1/2 cup reserved pineapple juice
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Salt to taste
- Fresh parsley or green onions, for garnish (optional)
Instructions
- Place chicken breasts in the bottom of the crockpot.
- In a medium bowl, mix BBQ sauce, 1/2 cup of reserved pineapple juice, garlic powder, black pepper, and a pinch of salt.
- Pour the sauce mixture over the chicken.
- Top with drained pineapple chunks.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked through and tender.
- Shred chicken with two forks if desired, and stir to combine with sauce.
- Serve over rice, in sandwiches, or with roasted veggies. Garnish with parsley or green onions if desired.
Notes
- Use chicken thighs for a juicier result if preferred.
- Add a splash of hot sauce or chili flakes for a spicier kick.
