Description

Crockpot Pineapple BBQ Chicken is a sweet and savory dish made with tender chicken breasts slow-cooked in tangy BBQ sauce and juicy pineapple. It’s an easy, flavorful recipe perfect for busy weeknights or effortless meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (20 oz) can pineapple chunks in juice, drained (reserve juice)
  • 1 cup BBQ sauce (your favorite brand)
  • 1/2 cup reserved pineapple juice
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste
  • Fresh parsley or green onions, for garnish (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a medium bowl, mix BBQ sauce, 1/2 cup of reserved pineapple juice, garlic powder, black pepper, and a pinch of salt.
  3. Pour the sauce mixture over the chicken.
  4. Top with drained pineapple chunks.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked through and tender.
  6. Shred chicken with two forks if desired, and stir to combine with sauce.
  7. Serve over rice, in sandwiches, or with roasted veggies. Garnish with parsley or green onions if desired.

Notes

  • Use chicken thighs for a juicier result if preferred.
  • Add a splash of hot sauce or chili flakes for a spicier kick.
  • Leftovers are great for tacos, wraps, or meal prepping lunches.
