Description

Golden brown crusty mini baguettes with a soft, airy interior made without any sugar. These classic French-style breads are perfect for sandwiches or serving with butter and jam.


Ingredients

  • 3 cups (375g) all-purpose flour or bread flour
  • 1 1/4 cups (300ml) warm water (110°F/45°C)
  • 1 1/2 tsp salt
  • 2 tsp instant yeast

Instructions

  1. In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.
  2. Add flour and salt, mixing until a dough forms. Knead for 8-10 minutes until smooth and elastic.
  3. Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  4. Punch down the dough and divide into 6 equal pieces. Shape each piece into a small baguette about 6 inches long.
  5. Place baguettes on a parchment-lined baking sheet, cover lightly, and let rise for 30 minutes.
  6. Preheat oven to 450°F (230°C) with a baking dish of water on the lower rack to create steam.
  7. Score the tops of the baguettes with a sharp knife and bake for 15-18 minutes or until golden brown and crusty.
  8. Cool on a wire rack before serving.
