Description
Crispy and golden on the outside, soft and sweet on the inside, these peach fritters are filled with fresh peaches and dusted with powdered sugar — the perfect summer treat.
Ingredients
Scale
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 large eggs
- 1/2 cup milk
- 1 cup fresh peaches, peeled and chopped
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk the eggs, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped peaches.
- Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat. Once hot (about 350°F or 175°C), carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
- Fry the fritters for 2–3 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.
- Dust the fritters with powdered sugar while still warm. Serve immediately and enjoy!
Notes
- For a twist, try adding a pinch of nutmeg or almond extract to the batter.
- These fritters are best served fresh but can be stored in an airtight container for up to 2 days.
- For extra sweetness, drizzle with honey or maple syrup before serving.
