- 2 cups cooked chicken, shredded
- 8 oz spaghetti, cooked al dente
- 2 tablespoons butter
- 1 small onion, chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 350°F (175°C). Butter a baking dish.
- Cook spaghetti according to package directions. Drain and set aside.
- In a large skillet, melt butter over medium heat. Sauté onion and mushrooms until soft.
- Add garlic and cook for 1 minute until fragrant.
- Sprinkle flour over vegetables and stir to form a roux. Cook for 1-2 minutes.
- Gradually whisk in chicken broth and heavy cream, stirring until sauce thickens.
- Remove from heat and stir in Parmesan cheese, salt, pepper, and half of the mozzarella cheese.
- Combine cooked spaghetti, shredded chicken, and sauce. Mix well.
- Transfer mixture to prepared baking dish. Sprinkle remaining mozzarella and breadcrumbs evenly on top.
- Bake for 25-30 minutes until bubbly and golden brown on top.
- Garnish with fresh parsley before serving.
