  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 3/4 cup chopped dill pickles (well-drained)
  • 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
  • 1 cup buttermilk
  • 1/4 cup pickle juice
  • 1 large egg
  • 1/4 cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  3. Stir in shredded cheese, chopped pickles, and dill to evenly distribute.
  4. In a separate bowl, whisk together buttermilk, pickle juice, egg, and oil.
  5. Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
