- 3/4 cup chopped dill pickles (well-drained)
- 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
- 1 cup buttermilk
- 1/4 cup pickle juice
- 1 large egg
- 1/4 cup vegetable oil
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
- Stir in shredded cheese, chopped pickles, and dill to evenly distribute.
- In a separate bowl, whisk together buttermilk, pickle juice, egg, and oil.
- Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
