- 2 cups elbow macaroni (uncooked)
- 2 tablespoons unsalted butter
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- 4 oz cream cheese, softened
- 1 1/2 cups whole milk
- 1/2 cup sour cream
- 1/4 cup pickle juice (from jar)
- 1/2 cup chopped dill pickles
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons chopped fresh dill (optional, for garnish)
Instructions
- Lightly grease the inside of your crock pot.
- In the crock pot, combine uncooked macaroni, butter, cheddar cheese, mozzarella, cream cheese, milk, sour cream, pickle juice, chopped pickles, garlic powder, salt, and pepper. Stir to combine.
- Cover and cook on low for 1.5 to 2 hours, stirring occasionally, until pasta is tender and cheese is fully melted and creamy.
- If mixture thickens too much, add a splash of milk and stir to loosen.
- Serve warm, garnished with fresh dill if desired.
Notes
- For a bolder pickle flavor, stir in extra chopped pickles just before serving.
