Description

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup frozen peas (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat if needed.
  2. Add the diced onion, bell pepper, and garlic to the skillet. Cook for 4–5 minutes, until the vegetables are softened.
  3. Stir in the rice, beef broth, Cajun seasoning, thyme, paprika, salt, and pepper. Bring to a boil, then reduce the heat to low and cover the skillet.
  4. Simmer for 20–25 minutes, or until the rice is tender and the liquid has been absorbed.
  5. If using peas, stir them into the rice during the last 5 minutes of cooking.
  6. Once the rice is cooked, fluff it with a fork and garnish with chopped green onions, if desired.
  7. Serve and enjoy!

Notes

  • This dish can be customized by adding other vegetables, such as celery or diced tomatoes.
  • For extra flavor, you can add a splash of hot sauce or a pinch of cayenne pepper for heat.
