- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup frozen peas (optional)
- Chopped green onions, for garnish (optional)
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat if needed.
- Add the diced onion, bell pepper, and garlic to the skillet. Cook for 4–5 minutes, until the vegetables are softened.
- Stir in the rice, beef broth, Cajun seasoning, thyme, paprika, salt, and pepper. Bring to a boil, then reduce the heat to low and cover the skillet.
- Simmer for 20–25 minutes, or until the rice is tender and the liquid has been absorbed.
- If using peas, stir them into the rice during the last 5 minutes of cooking.
- Once the rice is cooked, fluff it with a fork and garnish with chopped green onions, if desired.
- Serve and enjoy!
Notes
- This dish can be customized by adding other vegetables, such as celery or diced tomatoes.
- For extra flavor, you can add a splash of hot sauce or a pinch of cayenne pepper for heat.
