Description

Double Crust Brown Butter Peach Cobbler is a decadent Southern dessert with layers of tender peaches nestled between two golden, flaky crusts. Enhanced with nutty brown butter, warm spices, and a caramelized finish, it’s the perfect treat for summer or holidays.

  • 68 ripe peaches, peeled and sliced (about 6 cups)
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • Pinch of salt
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter and cook until it turns golden brown and fragrant (about 5–6 minutes). Set aside to cool slightly.
  3. In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, cornstarch, salt, and the brown butter. Toss until well coated.
  4. Roll out one pie crust and fit it into a 9×13-inch baking dish or deep pie dish. Prick the bottom with a fork.
  5. Pour the peach mixture into the crust and spread evenly.
  6. Top with the second crust (can be whole, lattice, or cut into strips). Seal the edges and cut small slits for steam if using a whole crust.
  7. Brush the top crust with a beaten egg and sprinkle with coarse sugar if desired.
  8. Bake for 45–55 minutes, or until the crust is golden and the filling is bubbling.
  9. Let cool for 20–30 minutes before serving. Best served warm with vanilla ice cream.

  • Use frozen or canned peaches (drained) if fresh are unavailable.
  • Brown butter adds deep flavor — don’t skip this step!
