- 6–8 ripe peaches, peeled and sliced (about 6 cups)
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons cornstarch
- Pinch of salt
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, melt the butter and cook until it turns golden brown and fragrant (about 5–6 minutes). Set aside to cool slightly.
- In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, cornstarch, salt, and the brown butter. Toss until well coated.
- Roll out one pie crust and fit it into a 9×13-inch baking dish or deep pie dish. Prick the bottom with a fork.
- Pour the peach mixture into the crust and spread evenly.
- Top with the second crust (can be whole, lattice, or cut into strips). Seal the edges and cut small slits for steam if using a whole crust.
- Brush the top crust with a beaten egg and sprinkle with coarse sugar if desired.
- Bake for 45–55 minutes, or until the crust is golden and the filling is bubbling.
- Let cool for 20–30 minutes before serving. Best served warm with vanilla ice cream.

- Use frozen or canned peaches (drained) if fresh are unavailable.
