Description

A vibrant and fresh Sicilian pesto made with sun-dried tomatoes, almonds, basil, and Parmesan cheese—perfect for tossing with pasta, spreading on bread, or using as a dip.


Ingredients

  • 1/2 cup sun-dried tomatoes (packed in oil, drained)
  • 1/3 cup blanched almonds
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine sun-dried tomatoes, almonds, basil, and garlic. Pulse until coarsely chopped.
  2. Add Parmesan cheese and pulse again to incorporate.
  3. With the processor running, slowly drizzle in olive oil until the mixture is smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Serve immediately with pasta, on toast, or store in the fridge in an airtight container for up to one week.

Notes

  • Use roasted almonds for extra flavor.
  • Add a pinch of red pepper flakes for a slight kick.
