- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup toasted slivered almonds (optional)
- 1 tablespoon sesame seeds
- For the Sesame Dressing:
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce or tamari
- 1 tablespoon maple syrup or honey
- 1 tablespoon lime juice
- 1 teaspoon grated fresh ginger
- 1 small garlic clove, minced
- 1–2 teaspoons sriracha (optional, for heat)
Instructions
- In a large bowl, combine green cabbage, red cabbage, carrots, green onions, cilantro, almonds, and sesame seeds.
- In a small bowl or jar, whisk together sesame oil, rice vinegar, soy sauce, maple syrup, lime juice, ginger, garlic, and sriracha (if using) until well blended.
- Pour the dressing over the cabbage mixture and toss well to coat evenly.
- Let the slaw sit for 10–15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- Add cooked edamame or shredded tofu to make it a protein-rich meal.
- Make ahead: The slaw can be prepped in advance; just keep the dressing separate until ready to serve.
