Description

A light and flavorful fish stew featuring tender white fish, vegetables, and a savory broth, perfect for a simple and healthy meal.


Ingredients

  • 1 lb white fish fillets (such as cod or haddock), cut into chunks
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups fish stock or vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add garlic and cook for 1 more minute.
  2. Stir in the sliced carrots and diced potatoes. Cook for 3-4 minutes, stirring occasionally.
  3. Add the diced tomatoes, fish stock, dried thyme, paprika, bay leaf, salt, and pepper. Bring the mixture to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
  4. Add the fish chunks and frozen peas to the pot. Stir gently, cover, and cook for an additional 5-7 minutes until the fish is fully cooked through and flaky.
  5. Remove the bay leaf, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • Use any firm white fish for this recipe, such as tilapia or halibut.
  • For a spicier stew, add a pinch of cayenne pepper or some red pepper flakes.
  • Feel free to add other vegetables like celery or bell peppers for extra flavor.
