- 1 lb white fish fillets (such as cod or haddock), cut into chunks
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups fish stock or vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add garlic and cook for 1 more minute.
- Stir in the sliced carrots and diced potatoes. Cook for 3-4 minutes, stirring occasionally.
- Add the diced tomatoes, fish stock, dried thyme, paprika, bay leaf, salt, and pepper. Bring the mixture to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
- Add the fish chunks and frozen peas to the pot. Stir gently, cover, and cook for an additional 5-7 minutes until the fish is fully cooked through and flaky.
- Remove the bay leaf, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- Use any firm white fish for this recipe, such as tilapia or halibut.
- For a spicier stew, add a pinch of cayenne pepper or some red pepper flakes.
- Feel free to add other vegetables like celery or bell peppers for extra flavor.
