- 6 large eggs
- 1/2 cup milk
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup diced onion (optional)
- 1/4 teaspoon dried oregano (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish (8×8-inch) with cooking spray or a little oil.
- Heat olive oil in a skillet over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes. If using, add the diced onion and cook until softened, about 3 minutes. Remove from heat and set aside.
- In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and dried oregano (if using).
- Stir the sautéed spinach mixture, feta cheese, and Parmesan cheese into the egg mixture.
- Pour the egg mixture into the prepared baking dish, spreading it evenly.
- Bake for 20-25 minutes, or until the eggs are set and lightly golden on top.
- Let cool for a few minutes before slicing into squares and serving. Enjoy warm!
Notes
- For extra flavor, try adding diced bell peppers, tomatoes, or mushrooms to the spinach mixture.
