Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup diced onion (optional)
  • 1/4 teaspoon dried oregano (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish (8×8-inch) with cooking spray or a little oil.
  2. Heat olive oil in a skillet over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes. If using, add the diced onion and cook until softened, about 3 minutes. Remove from heat and set aside.
  3. In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and dried oregano (if using).
  4. Stir the sautéed spinach mixture, feta cheese, and Parmesan cheese into the egg mixture.
  5. Pour the egg mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 20-25 minutes, or until the eggs are set and lightly golden on top.
