Easy Taco Lasagna combines the bold flavors of tacos with the comforting layers of lasagna, making it a family-friendly dinner packed with seasoned beef, salsa, cheese, and tortillas.

- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1/4 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 1/2 cups salsa
- 8 small flour tortillas
- 2 cups shredded Mexican cheese blend
- 1/2 cup sour cream (optional)
- Chopped green onions and cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft. Drain excess fat.
- Add taco seasoning and water. Stir to combine and cook for 2–3 minutes.
- Stir in black beans, corn, and salsa. Simmer for 2–3 minutes, then remove from heat.
- Place two tortillas at the bottom of the baking dish. Spread a third of the beef mixture on top and sprinkle with cheese.
- Repeat layers twice more, ending with tortillas and the remaining cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until cheese is bubbly and golden.
- Let rest for 5–10 minutes before slicing. Top with sour cream, green onions, and cilantro if desired.
Notes
- Swap beef for ground turkey or plant-based crumbles for a different twist.
- Add jalapeños for extra heat.
- This dish freezes well—make a double batch and save one for later.
