- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup long grain white rice
- 2 cups water or chicken broth
- 1 lb green beans, trimmed
- 1 tbsp butter
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tbsp chives, chopped
- 1 garlic clove, minced
- 1 tsp lemon juice
- Salt and pepper to taste (for sauce)
Instructions
- In a small bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub mixture over chicken breasts and let marinate for 15–20 minutes.
- Grill chicken over medium heat for 6–8 minutes per side, or until fully cooked and nicely charred. Let rest before slicing.
- Rinse rice and cook with water or broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes. Fluff with a fork.
- Steam green beans until tender-crisp, about 5–7 minutes. Toss with butter and season with salt.
- In a bowl, whisk together sour cream, mayonnaise, parsley, dill, chives, garlic, lemon juice, salt, and pepper to create the creamy herb sauce.
- Assemble plates with sliced grilled chicken, a scoop of rice, steamed green beans, and a generous drizzle of creamy herb sauce over the chicken. Serve immediately.
