Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup long grain white rice
  • 2 cups water or chicken broth
  • 1 lb green beans, trimmed
  • 1 tbsp butter
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp chives, chopped
  • 1 garlic clove, minced
  • 1 tsp lemon juice
  • Salt and pepper to taste (for sauce)

Instructions

  1. In a small bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub mixture over chicken breasts and let marinate for 15–20 minutes.
  2. Grill chicken over medium heat for 6–8 minutes per side, or until fully cooked and nicely charred. Let rest before slicing.
  3. Rinse rice and cook with water or broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes. Fluff with a fork.
  4. Steam green beans until tender-crisp, about 5–7 minutes. Toss with butter and season with salt.
  5. In a bowl, whisk together sour cream, mayonnaise, parsley, dill, chives, garlic, lemon juice, salt, and pepper to create the creamy herb sauce.
  6. Assemble plates with sliced grilled chicken, a scoop of rice, steamed green beans, and a generous drizzle of creamy herb sauce over the chicken. Serve immediately.

Notes

  • You can make the herb sauce in advance and store it chilled for up to 3 days.
  • Swap white rice for brown rice or cauliflower rice for a lower-carb option.
  • Use dried herbs if fresh are unavailable—just reduce quantities by half.
