Description

A classic French dessert, this Chocolate Soufflé is light, airy, and intensely chocolaty. With a delicate rise and a rich center, it’s a show-stopping treat perfect for special occasions or a romantic evening.


Ingredients

  • 2 tablespoons unsalted butter (plus more for greasing)
  • 2 tablespoons granulated sugar (for coating ramekins)
  • 4 oz dark chocolate (60-70% cocoa), chopped
  • 2 tablespoons heavy cream
  • 2 large egg yolks
  • 3 large egg whites
  • 1/8 teaspoon cream of tartar
  • 2 tablespoons granulated sugar (for whipping egg whites)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Butter two 6-oz ramekins and coat the inside with granulated sugar. Tap out the excess and set aside.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the chocolate with the cream until smooth. Remove from heat and let cool slightly.
  3. Whisk in the egg yolks until fully combined.
  4. In a clean bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add 2 tablespoons of sugar and continue beating until glossy stiff peaks form.
  5. Fold a spoonful of the whipped egg whites into the chocolate mixture to lighten it. Gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
  6. Spoon the batter into the prepared ramekins, smoothing the tops. Run your thumb around the edge of the batter to help it rise evenly.
  7. Bake for 12–15 minutes, or until the soufflés have risen and have a slight wobble in the center.
  8. Dust with powdered sugar and serve immediately.

  • You can add a splash of espresso or orange liqueur to the chocolate for added depth.
  • Use high-quality chocolate for the richest flavor.
