Description

A decadent twist on two classics, this French Onion Soup Mac & Cheese combines rich caramelized onions, creamy cheese sauce, and tender pasta for the ultimate comfort dish.


Ingredients

  • 300g macaroni or elbow pasta
  • 3 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 250ml beef or vegetable broth
  • 200ml heavy cream
  • 150g Gruyère cheese, shredded
  • 100g mozzarella cheese, shredded
  • 50g Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat butter and olive oil over medium-low heat. Add onions and sugar, and cook slowly for 25–30 minutes, stirring occasionally, until deeply caramelized.
  3. Add garlic and cook for another minute. Stir in flour and cook for 1–2 minutes to form a roux.
  4. Gradually add beef or vegetable broth while stirring. Simmer until thickened slightly.
  5. Stir in the cream, bring to a gentle simmer, then add Gruyère, mozzarella, and Parmesan. Stir until melted and smooth. Season with salt and pepper.
  6. Add cooked pasta to the cheese sauce and toss to coat.
  7. Transfer mixture to a baking dish, sprinkle extra cheese on top if desired, and broil for 3–5 minutes until bubbly and golden.
  8. Garnish with fresh thyme or parsley and serve warm.

Notes

  • Use Gruyère for authentic French onion soup flavor, or substitute with Swiss cheese.
  • For a deeper onion flavor, deglaze the pan with a splash of white wine before adding flour.
