A decadent twist on two classics, this French Onion Soup Mac & Cheese combines rich caramelized onions, creamy cheese sauce, and tender pasta for the ultimate comfort dish.

- 300g macaroni or elbow pasta
- 3 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/2 teaspoon sugar
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 250ml beef or vegetable broth
- 200ml heavy cream
- 150g Gruyère cheese, shredded
- 100g mozzarella cheese, shredded
- 50g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh thyme or parsley for garnish (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat butter and olive oil over medium-low heat. Add onions and sugar, and cook slowly for 25–30 minutes, stirring occasionally, until deeply caramelized.
- Add garlic and cook for another minute. Stir in flour and cook for 1–2 minutes to form a roux.
- Gradually add beef or vegetable broth while stirring. Simmer until thickened slightly.
- Stir in the cream, bring to a gentle simmer, then add Gruyère, mozzarella, and Parmesan. Stir until melted and smooth. Season with salt and pepper.
- Add cooked pasta to the cheese sauce and toss to coat.
- Transfer mixture to a baking dish, sprinkle extra cheese on top if desired, and broil for 3–5 minutes until bubbly and golden.
- Garnish with fresh thyme or parsley and serve warm.
Notes
- Use Gruyère for authentic French onion soup flavor, or substitute with Swiss cheese.
- For a deeper onion flavor, deglaze the pan with a splash of white wine before adding flour.
