Description

French Toast Waffles with Peach Sauce combines the crispy edges of waffles with the rich, custardy flavor of French toast. Topped with a sweet, fruity peach sauce, it’s a perfect breakfast or brunch treat that’s both indulgent and delicious.

  • 1/2 cup milk
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 4 slices thick-cut bread (such as challah or brioche)
  • Butter, for greasing the waffle iron
  • 1 tablespoon cornstarch
  • 2 cups fresh or frozen peaches, diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground ginger (optional)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your waffle iron and grease it with a little butter.
  2. In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla extract, and a pinch of salt.
  3. Dip the bread slices into the egg mixture, ensuring both sides are coated, then carefully place them on the preheated waffle iron. Close the iron and cook for 3-5 minutes, or until golden and crispy.
  4. While the French toast waffles are cooking, prepare the peach sauce. In a saucepan, combine peaches, sugar, and lemon juice. Bring to a simmer over medium heat.
  5. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Stir this into the simmering peaches and cook for an additional 2-3 minutes until the sauce thickens.
  6. If desired, add ground ginger for a warm, spiced flavor to the peach sauce.
  7. Once the waffles are done, remove from the waffle iron and plate. Spoon the peach sauce generously over the waffles.
  8. Dust with powdered sugar if desired and serve warm.

Notes

  • For a lighter version, use whole wheat or gluten-free bread for the waffles.
  • If fresh peaches are not available, canned or frozen peaches will work as well.
  • For an extra indulgent treat, add whipped cream or a scoop of vanilla ice cream on top.
