- 4 slices thick-cut bread (such as challah or brioche)
- Butter, for greasing the waffle iron
- 1 tablespoon cornstarch
- 2 cups fresh or frozen peaches, diced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon ground ginger (optional)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your waffle iron and grease it with a little butter.
- In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla extract, and a pinch of salt.
- Dip the bread slices into the egg mixture, ensuring both sides are coated, then carefully place them on the preheated waffle iron. Close the iron and cook for 3-5 minutes, or until golden and crispy.
- While the French toast waffles are cooking, prepare the peach sauce. In a saucepan, combine peaches, sugar, and lemon juice. Bring to a simmer over medium heat.
- In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Stir this into the simmering peaches and cook for an additional 2-3 minutes until the sauce thickens.
- If desired, add ground ginger for a warm, spiced flavor to the peach sauce.
- Once the waffles are done, remove from the waffle iron and plate. Spoon the peach sauce generously over the waffles.
- Dust with powdered sugar if desired and serve warm.
Notes
- For a lighter version, use whole wheat or gluten-free bread for the waffles.
- If fresh peaches are not available, canned or frozen peaches will work as well.
- For an extra indulgent treat, add whipped cream or a scoop of vanilla ice cream on top.
