- 2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried Italian herbs (or a mix of thyme, oregano, and basil)
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, and Italian herbs until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
- Sprinkle half of the Parmesan cheese over the potatoes before roasting.
- Roast for 25–30 minutes, or until golden brown and crispy, flipping halfway through if desired.
- Remove from the oven, sprinkle with the remaining Parmesan and chopped parsley, and serve hot.
Notes
- Use Yukon gold or red potatoes for best texture and flavor.
- Make sure the potatoes are in a single layer to ensure even roasting.
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting, then pat dry thoroughly.
