Description

Crispy on the outside and tender on the inside, these garlic parmesan roasted potatoes are a savory and satisfying side dish that’s easy to prepare and packed with flavor.


Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs (or a mix of thyme, oregano, and basil)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, and Italian herbs until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
  4. Sprinkle half of the Parmesan cheese over the potatoes before roasting.
  5. Roast for 25–30 minutes, or until golden brown and crispy, flipping halfway through if desired.
  6. Remove from the oven, sprinkle with the remaining Parmesan and chopped parsley, and serve hot.

Notes

  • Use Yukon gold or red potatoes for best texture and flavor.
  • Make sure the potatoes are in a single layer to ensure even roasting.
  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting, then pat dry thoroughly.
