- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ cup vegetable oil
- ¼ cup water
- ½ cup unsweetened cocoa powder
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1½ cups heavy cream
- ½ cup caramel sauce (plus more for drizzling)
- 1 cup chopped pecans, divided
- ½ cup semi-sweet chocolate chips, melted
- Powdered sugar (for dusting towel)
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat eggs and sugar with a hand or stand mixer for about 3–4 minutes until thick and pale. Add vanilla, oil, and water; mix well.
- Sift in cocoa powder, flour, baking powder, and salt. Gently fold into the wet ingredients until fully incorporated.
- Spread the batter evenly into the prepared pan and bake for 10–12 minutes, or until the cake springs back when touched.
- While the cake bakes, lay out a clean kitchen towel and dust it with powdered sugar.
- Immediately after removing the cake from the oven, turn it out onto the towel, peel off parchment paper, and roll the cake up in the towel starting from the short end. Let cool completely.
- In a chilled bowl, whip the heavy cream until stiff peaks form. Gently fold in ½ cup caramel sauce and ½ cup chopped pecans.
- Once the cake is cool, carefully unroll it and spread the caramel pecan filling evenly over the surface. Re-roll the cake (without the towel) tightly.
- Place seam-side down on a serving platter. Drizzle with melted chocolate and additional caramel sauce. Sprinkle with remaining pecans.
- Chill for 30 minutes before slicing. Serve and enjoy!
