- 1/4 cup unsalted butter, melted
- 1/3 cup granulated sugar

Instructions
- Preheat oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg, milk, and vanilla extract, and mix until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined—do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool for 5 minutes, then remove from the tin.
- Dip the tops of warm muffins in melted butter, then roll in the cinnamon-sugar mixture to coat.
- Serve warm or store in an airtight container.
Notes
- For extra flavor, add a pinch of nutmeg to the batter.
