  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder

  • For the topping:
  • 1/4 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, milk, and vanilla extract, and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined—do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  7. Bake for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool for 5 minutes, then remove from the tin.
  9. Dip the tops of warm muffins in melted butter, then roll in the cinnamon-sugar mixture to coat.
  10. Serve warm or store in an airtight container.

Notes

  • For extra flavor, add a pinch of nutmeg to the batter.
