Instructions
- Boil potatoes until tender, then drain and let cool slightly.
- In a food processor, combine potatoes, garlic, olive oil, lemon juice, and Greek yogurt.
- Blend until smooth and creamy.
- Stir in fresh dill and season with salt and pepper to taste.
- Transfer to a serving bowl and refrigerate for at least 30 minutes before serving.
- Serve chilled with pita chips, fresh vegetables, or bread.
Notes
- Adjust garlic quantity based on your preference for pungency.
- For a vegan version, substitute Greek yogurt with dairy-free yogurt.
- Adding a pinch of smoked paprika on top adds a lovely smoky flavor.
