Description

Greek Garlic Potato Dip is a creamy, flavorful dip combining tender potatoes with garlic, olive oil, and traditional Greek herbs, perfect as a spread or appetizer with pita bread or vegetables.


Ingredients

  • 2 medium potatoes, peeled and boiled until soft
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. Boil potatoes until tender, then drain and let cool slightly.
  2. In a food processor, combine potatoes, garlic, olive oil, lemon juice, and Greek yogurt.
  3. Blend until smooth and creamy.
  4. Stir in fresh dill and season with salt and pepper to taste.
  5. Transfer to a serving bowl and refrigerate for at least 30 minutes before serving.
