Description

Juicy, tender boneless chicken thighs marinated and grilled to perfection with smoky barbecue sauce. A quick and flavorful dish perfect for summer cookouts or easy weeknight dinners.

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup barbecue sauce (your favorite variety)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large bowl, whisk together barbecue sauce, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
  2. Add chicken thighs to the bowl and coat well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).
  3. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade and place on the grill. Discard any remaining marinade.
  5. Grill the chicken thighs for 5–6 minutes per side, or until they reach an internal temperature of 165°F (74°C) and develop a nice char.
  6. During the last 2–3 minutes of grilling, brush additional barbecue sauce on the chicken for extra flavor and caramelization.
  7. Remove from the grill and let rest for a few minutes before serving. Serve with sides like corn, coleslaw, or grilled vegetables.

Notes

  • Use a meat thermometer to ensure the chicken is perfectly cooked without drying it out.
  • For extra smoky flavor, grill over indirect heat or add soaked wood chips to your charcoal grill.
