- 2 lbs boneless, skinless chicken thighs
- 1 cup barbecue sauce (your favorite variety)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large bowl, whisk together barbecue sauce, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
- Add chicken thighs to the bowl and coat well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).
- Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Remove the chicken from the marinade and place on the grill. Discard any remaining marinade.
- Grill the chicken thighs for 5–6 minutes per side, or until they reach an internal temperature of 165°F (74°C) and develop a nice char.
- During the last 2–3 minutes of grilling, brush additional barbecue sauce on the chicken for extra flavor and caramelization.
- Remove from the grill and let rest for a few minutes before serving. Serve with sides like corn, coleslaw, or grilled vegetables.
Notes
- Use a meat thermometer to ensure the chicken is perfectly cooked without drying it out.
- For extra smoky flavor, grill over indirect heat or add soaked wood chips to your charcoal grill.
- You can slice the chicken and use it in sandwiches, wraps, or salads the next day.
