- Wooden or metal skewers

Instructions
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Add salmon cubes to the marinade, toss gently to coat, and refrigerate for 15–30 minutes.
- If using wooden skewers, soak them in water for 15–20 minutes to prevent burning.
- Preheat grill or grill pan to medium-high heat.
- Thread marinated salmon pieces onto skewers.
- Grill skewers for 2–3 minutes per side, or until salmon is opaque and has nice grill marks.
- Serve warm with lemon wedges and a sprinkle of fresh parsley if desired.
Notes
- Don’t over-marinate salmon—30 minutes max to prevent breaking down the fish.
