Description

Grilled Lemon Salmon Skewers are a fresh, zesty, and protein-packed dish perfect for summer grilling. Tender chunks of salmon are marinated in a bright lemon-garlic mix, skewered, and grilled to perfection—ideal for healthy dinners or backyard gatherings.


Ingredients

  • 1 lb salmon fillet, skin removed and cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers
  • Optional: lemon wedges and fresh parsley for serving

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  2. Add salmon cubes to the marinade, toss gently to coat, and refrigerate for 15–30 minutes.
  3. If using wooden skewers, soak them in water for 15–20 minutes to prevent burning.
  4. Preheat grill or grill pan to medium-high heat.
  5. Thread marinated salmon pieces onto skewers.
  6. Grill skewers for 2–3 minutes per side, or until salmon is opaque and has nice grill marks.
  7. Serve warm with lemon wedges and a sprinkle of fresh parsley if desired.

Notes

  • Don’t over-marinate salmon—30 minutes max to prevent breaking down the fish.
  • Add vegetables like zucchini, cherry tomatoes, or bell peppers to the skewers for variety.
