Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons ranch seasoning mix
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh chopped parsley, for garnish (optional)
- Wooden or metal skewers (soaked if wooden)
Instructions
- In a large bowl, whisk together olive oil, ranch seasoning, minced garlic, Parmesan cheese, lemon juice, salt, and pepper.
- Add chicken cubes to the marinade and toss until well coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes before grilling.
- Thread the marinated chicken pieces onto the skewers evenly.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and nicely charred (internal temperature should reach 165°F / 74°C).
- Remove from the grill, sprinkle with chopped parsley, and serve hot.
Notes
- Serve with rice, salad, or grilled veggies for a complete meal.
- For added flavor, sprinkle extra Parmesan over the skewers right after grilling.
- Use chicken thighs for an even juicier result.
