A lean and flavorful twist on the classic meatloaf, this ground chicken version is moist, protein-packed, and perfect for a healthy weeknight dinner.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup ketchup (plus extra for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
- In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
- In a large bowl, mix ground chicken, soaked breadcrumbs, Parmesan, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, pepper, and ketchup.
- Transfer mixture to the prepared loaf pan and shape into a loaf.
- Spread extra ketchup on top for a glaze.
- Bake for 45–50 minutes or until internal temperature reaches 165°F (74°C).
- Let rest for 5–10 minutes before slicing and serving.
Notes
- Use ground turkey as an alternative to chicken.
- Top with BBQ sauce instead of ketchup for a smoky flavor.
- Leftovers make great sandwiches or wraps.
