Description

A lean and flavorful twist on the classic meatloaf, this ground chicken version is moist, protein-packed, and perfect for a healthy weeknight dinner.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup ketchup (plus extra for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
  3. In a large bowl, mix ground chicken, soaked breadcrumbs, Parmesan, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, pepper, and ketchup.
  4. Transfer mixture to the prepared loaf pan and shape into a loaf.
  5. Spread extra ketchup on top for a glaze.
  6. Bake for 45–50 minutes or until internal temperature reaches 165°F (74°C).
  7. Let rest for 5–10 minutes before slicing and serving.

Notes

  • Use ground turkey as an alternative to chicken.
  • Top with BBQ sauce instead of ketchup for a smoky flavor.
  • Leftovers make great sandwiches or wraps.
