Ingredients

  • 1/2 cup coconut sugar or brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped peanuts for added crunch

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract until smooth.
  3. Add baking soda and salt, and mix until fully incorporated.
  4. If desired, fold in chopped peanuts for texture.
  5. Roll dough into 1-inch balls and place on the baking sheet, spacing about 2 inches apart.
  6. Using a fork, gently flatten each ball and create a criss-cross pattern.
  7. Bake for 10–12 minutes until edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
