Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract until smooth.
- Add baking soda and salt, and mix until fully incorporated.
- If desired, fold in chopped peanuts for texture.
- Roll dough into 1-inch balls and place on the baking sheet, spacing about 2 inches apart.
- Using a fork, gently flatten each ball and create a criss-cross pattern.
- Bake for 10–12 minutes until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
