  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup low-fat cottage cheese

  • 1 cup heavy whipping cream, cold
  • 2 tbsp powdered sugar (optional)
  • Fresh strawberries, sliced (for garnish)

Instructions

  1. In a mixing bowl, dissolve the strawberry gelatin in boiling water. Stir well until completely dissolved.
  2. Add cold water to the gelatin mixture and stir.
  3. Pour the mixture into a large bowl and refrigerate for about 45 minutes, or until it starts to thicken but is not fully set (like soft jelly).
  4. In a separate bowl, beat the heavy whipping cream with powdered sugar until stiff peaks form.

  7. Fold the partially set gelatin into the creamy mixture until fully combined.
