- 2 lbs ground beef or stew meat
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, diced
- 3 large carrots, sliced
- 2 cups corn kernels (fresh, frozen, or canned)
- 2 cups green beans, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef or stew meat and cook until browned. Remove excess grease if necessary.
- Add onion and garlic to the pot and cook for 3-4 minutes until softened.
- Stir in potatoes, carrots, diced tomatoes, beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes until the meat and vegetables are tender.
- Add corn and green beans and cook for an additional 10 minutes.
- Taste and adjust seasoning as needed. Serve hot with crusty bread.
Notes
- This stew can be made with ground beef, stew meat, or even sausage for variety.
- Great for camping—cook over an open fire in a cast-iron pot.
- Leftovers freeze well for up to 3 months.
