Ingredients
Scale
- 1 lb (450g) ground beef
- 1 packet taco seasoning (or homemade blend)
- 1/2 cup water
- 1 (16 oz) can refried beans
- 6 small flour tortillas
- 1 1/2 cups shredded Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup sliced green onions
- 1/4 cup enchilada sauce or taco sauce
- Oil for frying or brushing (if baking)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease or line a baking sheet with parchment paper.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and 1/2 cup water. Simmer until thickened, about 5 minutes.
- In a separate pan or microwave, heat refried beans until warm and spreadable.
- Lightly fry or toast tortillas in a skillet until crisp, or bake for 5 minutes per side.
- On a baking sheet, lay out 3 tortillas. Spread a layer of refried beans and top with seasoned beef. Place a second tortilla on top of each one.
- Spread enchilada or taco sauce over the top tortillas. Sprinkle with cheese, tomatoes, olives, and green onions.
- Bake for 8–10 minutes or until cheese is melted and bubbly.
- Remove from oven and slice to serve. Add sour cream or guacamole if desired.
Notes
- Customize with your favorite toppings like jalapeños, corn, or salsa verde.
- For a vegetarian version, skip the beef and double the beans or use meatless crumbles.
- To make it crispier, bake tortillas separately before assembling.
