Description

Homemade Rice Pilaf is a fragrant and flavorful side dish made with long-grain rice sautéed with onions and cooked in broth to perfection. It’s a versatile accompaniment to many meals.


Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup slivered almonds (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, melt butter over medium heat.
  3. Add chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add rice and stir frequently for 2-3 minutes to lightly toast the grains.
  5. Pour in chicken broth, salt, and pepper. Stir once, then bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  7. Remove from heat and let stand, covered, for 5 minutes.
  8. Fluff rice with a fork and stir in slivered almonds and fresh parsley if using. Serve warm.

Notes

  • For a vegetarian version, use vegetable broth instead of chicken broth.
  • Add sautéed mushrooms or peas for extra flavor and texture.
  • Be careful not to lift the lid during cooking to keep rice fluffy.
