- 500g fresh salmon fillet, skin removed and cut into finger-sized strips
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1 tsp lemon zest
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Olive oil or cooking spray for baking
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with lemon zest, garlic powder, salt, and pepper.
- Coat each salmon finger first in flour, shaking off excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture.
- Place the coated salmon fingers on the prepared baking sheet.
- Lightly spray or drizzle olive oil over the fingers for extra crispiness.
- Bake for 12–15 minutes, turning halfway through, until golden brown and cooked through.
- Serve warm with tartar sauce or lemon wedges.

- Use fresh salmon for best flavor and texture.
- For a gluten-free option, substitute all-purpose flour and breadcrumbs with gluten-free alternatives.
- These can also be pan-fried in a little oil for a crispier finish.
