- 4 bone-in, skin-on chicken thighs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 2 tablespoons butter
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Brown chicken thighs on both sides until golden, about 5 minutes per side. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened.
- Sprinkle flour over onions and stir to form a roux, cooking for 1-2 minutes.
- Gradually whisk in chicken broth, scraping the bottom of the pan to deglaze.
- Add thyme, paprika, and butter. Stir until gravy thickens.
- Return chicken to the skillet, cover, and simmer for 20-25 minutes until chicken is cooked through.
- Serve chicken topped with gravy, alongside mashed potatoes or rice.
Notes
- Use bone-in chicken for more flavorful gravy.
- For thicker gravy, simmer a bit longer or add more flour slurry.
- Fresh herbs like rosemary or parsley can be added for extra aroma.
