- 1 lb large shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon sweetened condensed milk
- 1/2 cup cornstarch
- 1 egg white
- 1/2 cup walnuts
- 1/4 cup water
- 1/4 cup granulated sugar
- Vegetable oil, for frying
- Salt, to taste
- Green onions or sesame seeds, for garnish (optional)
Instructions
- In a small saucepan, bring water and sugar to a boil. Add walnuts and cook for 2 minutes. Remove and place on parchment paper to cool and harden.
- In a bowl, whisk together mayonnaise, honey, and condensed milk. Set aside.
- In a separate bowl, mix shrimp with egg white and then toss with cornstarch until evenly coated.
- Heat vegetable oil in a deep skillet or wok over medium-high heat. Fry shrimp in batches until golden and crispy, about 2–3 minutes per batch. Drain on paper towels.
- Toss the fried shrimp in the honey-mayo sauce until evenly coated.
- Top with candied walnuts and optional garnishes. Serve immediately.
Notes
- Use raw shrimp for best texture; pre-cooked shrimp will become rubbery.
- Let the candied walnuts cool completely for maximum crunch.
- For a lighter version, bake or air-fry the shrimp instead of deep-frying.
