- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- 1 cup all-purpose flour (heat-treated)
- 1/2 tsp salt
- 1/2 cup mini chocolate chips
- 1 pint vanilla ice cream, slightly softened
- 1/3 cup hot fudge sauce, cooled to room temperature
Instructions
- In a mixing bowl, cream together butter, brown sugar, and granulated sugar until smooth.
- Stir in vanilla and milk. Add heat-treated flour and salt, mixing until dough forms.
- Fold in mini chocolate chips.
- Divide the dough into 12 equal balls and flatten each into a disk (about 1/4 inch thick). Freeze for 20–30 minutes.
- Place a scoop of softened ice cream onto 6 of the cookie dough disks. Drizzle with hot fudge.
- Top each with another cookie dough disk and press gently to form a sandwich.
- Wrap each sandwich in parchment paper or plastic wrap and freeze until firm (at least 1 hour).
- Serve frozen and enjoy!
Notes
- To heat-treat flour, bake at 350°F (175°C) for 5 minutes or microwave in 20-second intervals until it reaches 165°F (74°C).
- Use different ice cream flavors like chocolate or cookie dough for variety.
- Let sit at room temperature for 2–3 minutes before eating for easier biting.
