Description

Italian Sausage Potato Soup with Carrots & Spinach is a hearty, comforting soup filled with savory sausage, tender potatoes, sweet carrots, and fresh spinach, perfect for chilly days.


Ingredients

  • 1 lb Italian sausage, crumbled
  • 4 large potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 4 cups chicken broth
  • 2 cups whole milk
  • 2 cups fresh spinach, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat and cook the sausage until browned and cooked through. Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3 minutes.
  3. Add the diced potatoes, carrots, chicken broth, and milk. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes and carrots are tender.
  4. Add the cooked sausage back into the pot along with the spinach, oregano, basil, salt, and pepper.
  5. Simmer for an additional 5–7 minutes, or until the spinach wilts and the soup is heated through.
  6. Adjust seasoning as needed and serve hot.

Notes

  • For a creamier texture, mash some of the potatoes in the soup.
  • Top with grated Parmesan cheese for extra flavor.
  • Great served with crusty bread on the side.
