Italian Sausage Potato Soup with Carrots & Spinach is a hearty, comforting soup filled with savory sausage, tender potatoes, sweet carrots, and fresh spinach, perfect for chilly days.

- 1 lb Italian sausage, crumbled
- 4 large potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 4 cups chicken broth
- 2 cups whole milk
- 2 cups fresh spinach, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat and cook the sausage until browned and cooked through. Remove and set aside.
- In the same pot, sauté onion and garlic until softened, about 3 minutes.
- Add the diced potatoes, carrots, chicken broth, and milk. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes and carrots are tender.
- Add the cooked sausage back into the pot along with the spinach, oregano, basil, salt, and pepper.
- Simmer for an additional 5–7 minutes, or until the spinach wilts and the soup is heated through.
- Adjust seasoning as needed and serve hot.
Notes
- For a creamier texture, mash some of the potatoes in the soup.
- Top with grated Parmesan cheese for extra flavor.
- Great served with crusty bread on the side.
