Japanese Cheesecake is a light, fluffy, and airy dessert that combines the creamy richness of cream cheese with the delicate texture of a soufflé, resulting in a melt-in-your-mouth treat.

- 250g cream cheese, softened
- 50g unsalted butter
- 100ml whole milk
- 6 large eggs, separated
- 140g granulated sugar
- 60g cake flour
- 20g cornstarch
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat oven to 320°F (160°C). Line a 8-inch round cake pan with parchment paper and wrap the outside with foil to prevent water seepage.
- In a heatproof bowl over simmering water, melt cream cheese, butter, and milk together until smooth. Remove from heat and let cool.
- Whisk egg yolks into the cream cheese mixture one at a time, then add vanilla extract.
- Sift cake flour and cornstarch into the mixture and gently fold to combine.
- In a separate clean bowl, beat egg whites and cream of tartar until foamy. Gradually add sugar and beat until stiff peaks form.
- Fold one-third of the egg whites into the cream cheese mixture to lighten it, then gently fold in the remaining whites until fully incorporated.
- Pour batter into the prepared pan. Place the pan in a larger baking dish filled with hot water (water bath).
- Bake for 60 minutes or until the top is golden and a skewer inserted comes out clean.
- Turn off oven and leave the cake inside with the door slightly ajar for 15 minutes to prevent cracking.
- Remove from oven and cool completely before removing from pan. Dust with powdered sugar before serving.
