- 1 can tuna in water, drained
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 celery stalk, finely chopped
- 2 tablespoons red onion, finely chopped
- Salt and pepper, to taste
- 4 slices of whole grain or sourdough bread
- 4 lettuce leaves
- 1 small tomato, thinly sliced
- 1/2 cucumber, thinly sliced
Instructions
- In a bowl, mix the drained tuna with mayonnaise, Dijon mustard, lemon juice, celery, and red onion. Season with salt and pepper.
- Toast the bread slices lightly if desired.
- Layer the tuna salad evenly on two slices of bread.
- Add lettuce, tomato, and cucumber slices on top of the tuna.
- Top with the remaining bread slices to form sandwiches.
- Cut sandwiches in half and serve immediately.
Notes
- For extra flavor, add capers or chopped pickles to the tuna mixture.
