Description

This Joe & The Juice Tuna Sandwich Copycat features a fresh, vibrant mix of tuna salad layered with crisp veggies on soft, crusty bread. It’s a perfect blend of creamy, tangy, and crunchy for a delicious lunch or snack.


Ingredients

  • 1 can tuna in water, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 celery stalk, finely chopped
  • 2 tablespoons red onion, finely chopped
  • Salt and pepper, to taste
  • 4 slices of whole grain or sourdough bread
  • 4 lettuce leaves
  • 1 small tomato, thinly sliced
  • 1/2 cucumber, thinly sliced

Instructions

  1. In a bowl, mix the drained tuna with mayonnaise, Dijon mustard, lemon juice, celery, and red onion. Season with salt and pepper.
  2. Toast the bread slices lightly if desired.
  3. Layer the tuna salad evenly on two slices of bread.
  4. Add lettuce, tomato, and cucumber slices on top of the tuna.
  5. Top with the remaining bread slices to form sandwiches.
  6. Cut sandwiches in half and serve immediately.

Notes
