This Lactose Free Vanilla Ice Cream is creamy, smooth, and rich in flavor—made without dairy so it’s perfect for those with lactose intolerance or anyone looking for a lighter treat.
Ingredients

- 2 cups lactose-free whole milk or almond milk
- 1 cup full-fat coconut milk (for creaminess)
- 3/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp vanilla extract
- Pinch of salt
Instructions
- In a small bowl, mix 1/4 cup of the lactose-free milk with cornstarch until smooth. Set aside.
- In a saucepan, combine remaining lactose-free milk, coconut milk, sugar, and salt. Bring to a gentle simmer over medium heat, stirring constantly.
- Whisk in the cornstarch slurry and continue cooking until the mixture thickens slightly (about 5–7 minutes).
- Remove from heat and stir in vanilla extract.
- Let mixture cool to room temperature, then refrigerate for at least 3 hours (or overnight).
- Churn in an ice cream maker according to manufacturer’s instructions until soft-serve consistency is reached.
- Transfer to a container and freeze for 2–4 hours until firm.
Notes
- For a nut-free version, use oat milk instead of almond milk.
- If you don’t have an ice cream maker, freeze the mixture in a shallow pan and stir every 30 minutes until creamy (about 3–4 hours).
- Add mix-ins like dairy-free chocolate chips or berries during the last few minutes of churning.
