Description

Layered Beef & Potato Hobo Bake is a hearty, family-friendly dish made with simple, wholesome ingredients. Layers of seasoned ground beef, thin-sliced potatoes, onions, and cheese bake together in a foil or casserole dish for an easy, comforting meal with minimal cleanup. Perfect for weeknights, camping, or make-ahead dinners.

  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 4 medium potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom or cream of cheddar soup
  • 1/4 cup milk
  • 2 tbsp butter, sliced into small pats
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or prepare heavy-duty foil if baking hobo-style.
  2. In a skillet over medium heat, brown ground beef with salt, pepper, garlic powder, onion powder, and paprika. Drain excess grease and set aside.
  3. In a small bowl, mix condensed soup with milk until smooth.
  4. Layer half the sliced potatoes on the bottom of the baking dish. Top with half the onions, half the cooked beef, and a few spoonfuls of the soup mixture. Repeat layers.
  5. Pour remaining soup mixture evenly over the top. Dot with butter.
  6. Cover tightly with foil and bake for 50–60 minutes, or until potatoes are fork-tender.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until melted and bubbly.
  8. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • Use a mandoline to get evenly thin potato slices that cook more evenly.
  • This dish can be prepped ahead and refrigerated before baking—just add 10 extra minutes to the bake time.
  • For added flavor, substitute half the beef with ground sausage or add chopped bell peppers between the layers.
