- 4 chicken thighs or breasts, bone-in and skin-on
- 4 cloves garlic, minced
- ½ cup fresh lemon juice
- ¼ cup olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine minced garlic, lemon juice, olive oil, cumin, coriander, paprika, salt, and pepper.
- Place the chicken in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat oven to 400°F (200°C).
- Place the marinated chicken on a baking sheet or oven-safe dish.
- Bake for 35–40 minutes, or until the chicken is cooked through and the skin is crispy and golden.
- Remove from oven and let rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
