- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the shrimp with salt, pepper, lemon zest, and red pepper flakes (if using). Set aside.
- In a small saucepan, bring the broth to a boil. Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork and stir in the feta cheese.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add the shrimp and cook for 2–3 minutes per side until pink and cooked through.
- Stir in lemon juice and toss the shrimp to coat well.
- Assemble the bowls by dividing the couscous among bowls and topping with shrimp, cherry tomatoes, cucumber, and red onion.
- Garnish with parsley and serve warm.

- Use pearl couscous for a heartier texture.
- Add a drizzle of tzatziki or extra lemon juice for more flavor.
- Substitute quinoa for couscous if desired.
