Instructions
- Preheat your waffle iron according to manufacturer’s instructions and lightly grease it.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the sour cream, milk, lemon zest, lemon juice, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture and stir just until combined (do not overmix).
- Spoon batter into the preheated waffle iron and cook until golden and crisp, about 3–5 minutes depending on your waffle iron.
- Serve warm with a dusting of powdered sugar, lemon glaze, or fresh berries.
Notes
- For extra lemon flavor, add a few drops of lemon extract or use lemon glaze instead of powdered sugar.
- Can be made ahead and reheated in the toaster for a crisp finish.
