- 12 oz (340 g) pasta of choice (fettuccine, penne, or spaghetti)
- 2 tbsp olive oil
- 1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté until fragrant, about 30 seconds.
- Pour in heavy cream and chicken broth, stirring to combine. Reduce heat to medium-low and let simmer for 3–4 minutes.
- Stir in Parmesan cheese until melted and sauce is smooth.
- Add cooked pasta and chicken back to the skillet, tossing to coat in the sauce.
- Adjust consistency with reserved pasta water if needed.
- Garnish with fresh parsley before serving.

- Reserve pasta water for sauce adjustments.
